Fish batter for Deep frying

2/3 cup soy powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon vinegar
2/3 cup water

Cut fish into 2 x 1 1/2 in. pieces. Pat dry with paper towels. Mix powder
and salt. Set aside. Mix baking soda and vinegar. Stir vinegar mixture and
water into powder mixture, beat until smooth. Dip fish into batter, allow
excess to drip off into bowl. Fry for about 3 minutes. Drain on paper towel. The recipe says this will
coat a pound of cod or other lean fish fillets.

Low Carb Batter

 Just made myself some battered fish and veg. and thought it was very nice.

2 large eggs - separated
2 tbsp Soya Flour
1/2 tsp Xanthum Gum or Baking powder
1/2 tsp Salt
1/2 tsp Black pepper

Beat the egg whites until frothy then add the Xanthum Gum or Baking powder and carry on beating until stiff. In a separate bow beat the egg yolks then gently fold these into othe egg whites carefully. 
Combine the dry ingredients and add these carefully to the egg mixture until totally incorporated.
Dip your veg or fish etc into the batter and fry or deep fry.

Haven't tried this using almound flour or oat flour yet.
Could also add cheese or cayenne pepper to this for a chan
